Walnut cake (Slovenia)


For the dough:
  • 600 g flour
  • 30 g yeast
  • 200 ml milk
  • 140 g sugar
  • 140 g butter or margarine
  • 4 egg yolks
  • 1 pack vanilla sugar
  • grated lemon zest
For the filling:
  • 400 g walnuts
  • 200 ml milk
  • 250 g sugar
  • 2 tablespoons rum
  • 2-3 egg whites


1 Pile the flour in a bowl and make a well on top.
2 Crumble the yeast and add sugar, salt, butter, and milk into the well and mix. Le the bowl with the flour and the starter to rise for 30 minutes.
3 Le the bowl with the flour and the starter to rise for 30 minutes. Cover the starter with flour; add eggs, butter or margarine, sugar, and egg yolks, and knead with an electric mixer.
4 During kneading, add lukewarm milk to obtain a delicate leavened dough. Let rise for another 30 minutes.
5 Roll out the dough on a floured tablecloth and spread the filling over it. To make the filling, pour hot milk over walnuts and sugar. Add rum. Then, fold in beaten egg whites (with soft peaks). The filling should be easily spreadable, but not too runny. Sprinkle lemon zest over the filling.
6 Roll the dough with filling and place in a greased and dusted round clay or ceramic baking dish. Let the cake rise again in a warm place; then, transfer to oven.
